EXECUTIVE CHEF – REMOTE CAMP
Under the direction of the Site Manager:
Responsible for procurement, storage, preparation & serving of all food; maintenance of the tightest possible professional standards in meal service; establish and monitor production planning against scope of work & camp requirement; monitor and react to customer preference; coordinate menu plan; schedule & direct staff; attend camp meetings.
List of Duties:
1. Controls food production planning to match menus. Reviews and adapts menus in response to customer preference, seasonal changes, etc…
2. Monitor menus for nutritional balance.
3. Monitor systems and policies as required by Primco Dene Catering LP.
4. Ensures performance of duties in accordance with job descriptions for production work forces.
5. Cooperates fully with manage4ment to ensure food is properly stored and prepared. Ensures recipes are followed, cost monitored, and that product mix meets demand keeping food wastage to a minimum.
6. Schedules preparation and serving staff.
7. Communicates effectively with management staff and hourly paid staff.
8. Utilizes and assists in training activities as appropriate to the food service operation.
9. Performs other related duties as assigned by the Camp Manager.
Other:
- Professionally qualified Chef. Additional management qualifications an asset.
- Excellent communication skill, both verbal and written. In depth knowledge of all aspects of camp food services operations, including procurement, storage, preparation and customer service. Ability to plan, schedule staff and monitor staff performance.
- Ten years experience in food preparation for camp sites. Five years supervisory experience in large camp operations.
- Ongoing supervision of all cooking and service staff responsible for storing, preparing and serving food.
- Oversee adherence to all safety systems in every aspect of food service. Ensure practices followed to the benefit of staff, camp residents and all other as appropriate.
- Continual walking, standing, bending and lifting kitchen equipment and supplies.
- Ability to plan staffing needs in conjunction with menus and resident population to ensure complete availability of quality food items as needed ate every meal period.
